Pancakes are something we all love, with savoury or sweet fillings. If you can’t have dairy or eggs trying to make them can be tricky. I’m happy to say after experiencing with egg replacer, bananas and apple sauce, I have found a recipe that works. It simply uses sunflower oil.
- 100g self raising flour
- Pinch of salt
- 125ml of dairy free milk (Oatly or any df milk)
- 55ml cold water
- 2 small tbsp oil (sunflower is our oil of choice)
- 1/2 tsp vanilla
I’m a bit hit and miss and just throw everything in mix and beat. You could sift the flour and add the ingredients bit by bit.
It can be made in advance and stored in the fridge, they also freeze well between grease proof paper sheets.
The proof is always in the eating. This was Georges first taste of pancakes, as I only started weaning a few weeks ago. Its fair to say he loved them as much a Stanley does.
